A study by Centre for Science and Environment has revealed that Bread, buns contain elements which could be carcinogenic to humans.
According to the study, 84% of bread and bakery products samples collected from Delhi contained residues of Potassium Bromate and Potassium Iodate, which have been declared as carcinogenic to humans by International Agency for Research on Cancer (IARC).
According to Joint FAO/WHO Expert Committee use of Potassium Bromate as a flour treatment agent is not acceptable and its use has already been banned in the European Union, Canada, Nigeria, Brazil, South Korea, Peru and some other countries.
However, Food Safety and Standards Authority of India (FSSAI) permits the use of both substances along with few limitations.
According to Food Safety Standards 2011 regulations, the limit for a maximum level of use of potassium bromate and/or potassium iodate is set at 50 mg/Kg in bread. In flour for bakery, potassium bromate is permitted with the maximum level of use at 20 mg/Kg.
